Your mom always told you it was the most important meal of the day, and while science on that is tenuous at best, it's definitely my favorite meal of the day. I love the weekends because I can get extravagant with my breakfasts. Eggs Benedicts, scrambles with every vegetable I can find in my kitchen, blueberry pancakes with yogurt and fruit compote, I do not mess around when it comes to breakfast. During the week, I'm often pressed for time and can't be as creative in the kitchen. But, I keep a few quick recipes in my arsenal so that I can start my day off on the best note. Here are a few of my favorite breakfast options: Have you tried Stoked Roasters coffee yet? I encourage you to put it in your cart immediately because it is AMAZING. I grind my beans each morning and brew a fresh french press. The smell of the beans is overwhelmingly delicious, and it's the perfect way to start my day. The beans are the highest quality, and there are a few different blends to satisfy whatever your palette is craving. I'm a fan of the Dawn Patrol, but you really can't go wrong with any of them. I love that the creator of Stoked, Jax, combined her love of the outdoors and of coffee to get us fueled up for whatever adventures are in store.
One bite of Purely Elizabeth and I was hooked. I love greek yogurt, it's an easy way for me to get protein and to rev up my metabolism. But yogurt isn't exactly the most exciting or enjoyable thing to eat, so I spice it up with granola. My standard bowl is topped with Purely Elizabeth (cranberry quinoa for the win), sliced bananas and fresh berries, and a sprinkle of chia seeds. Pro Tip: when you're running late (happens to me more often than I'd like to admit) and you don't even have time for a bowl of yogurt, grab a mini bag and pour milk directly into it. Talk about breakfast on-the-go!
Can you ever go wrong with a piece of toast and peanut butter? That was a rhetorical questions because obviously you can't. It's loaded with protein and healthy fats to get your day to a delicious, and nutritious start. Want to make your boring peanut butter toast next-level delicious? I recommend using Justin's Honey Peanut Butter (or your preferred flavor), top with sliced bananas and voila, you've got yourself a Monkey Elephant! I make sure I have a jar in my pantry at all times, and if you dig through my purse you'll most likely encounter a few Maple Almond single-serves.
When we roll into the winter season, I hardly find anything more comforting than a hot bowl of oatmeal. It's really tough to beat the convenience of these Share Good Oatmeal cups. It's so simple, just boil some water, fill to the top, and let sit for a few minutes. The snickerdoodle is out-of-this-world yum, and I like to mix in some crushed nuts, or fresh berries if I have some. If you're late and dashing out the door (like I am, more often than not) you can easily eat one in the car, or if you have time I recommend you sit down and enjoy it at the table like a normal human.
Smoothies! I got a Vitamix for my birthday last year and I think I've used it every single day since I opened the package. It can do everything--and I mean everything. But what I use it for most often is my daily green smoothie. I like to start with Vega One powder, then add frozen fruit, almond milk, handfuls of spinach, flax seeds, coconut flakes, whatever's lying around the kitchen really. Pro Tip: Prep on the weekends, and throw all your smoothie ingredients into a ziplock bag. Store in the freezer and in the morning all you have to do is pour the contents into the blender, add liquid, blend, and enjoy.
Okay this might feel ambitious, but trust me, if you can make time in your morning routine for pancakes, you'll be so glad you did. I like to mix SFH Fuel into my batter, for some added coconut flavor and some increased protein. It gets my metabolism up and keeps me satisfied all morning. Add mix-ins like bananas, blueberries, or chocolate chips. You don't have to make a huge batch, my favorite thing is to quarter a recipe, use a small sautee pan and just cook myself one single, giant pancake. Feels like a classy brunch but in the comfort of my own home. Hold the mimosa, until Saturday morning, that is!
