A Rip Van Wafel is distinguished from your standard waffle. Inspired on the traditional Amsterdam stroopwafel but much lower in sugar (8g) while still delivering on the carbs (19g), dutchman Rip started making these in his dorm room as a college senior at Brown University.

Rip Van Wafels use simple NON-GMO ingredients, the same kind you’d use if you made them in your own kitchen like eggs, flour, sugar, baking soda and salt. Plus a few nutritious ingredients like, oats, chickpea flour and flax seed oil for an extra dose of Omega 3s. They are soft, easy to chew and don’t pack an overdose of calories or carbs. They’re perfect.

We truly believe there is no wrong time to have a wafel.  First thing in the morning they go great topped with greek yogurt, nuts and dried fruit or with a steaming cup of coffee. Mid-morning they make a great snack. Slap some nut butter on them and they make the perfect sandwich. Enjoy them placed on top of your 3pm cup of coffee as it cools down and taste a perfectly warmed wafel. Let them carry you through your evening workout, and if you give us time I’m sure we can find a way to make dinner with them.

These are my favorite waffles, only gripe is packaging can be finicky to open. Well worth it though.

Surprisingly, despite my sweet tooth these were a little too sweet for me. Yet the vanilla flavor was still quite delicious. These are thin, chewy, and are reminiscent of a wafer. Quite tasty for a snack.

Strawberry Rip Van Wafels are packaged individually so they stay fresh without preservatives and are convenient to carry in my bag. These are thin waffle sandwich cookies with a layer of strawberry filling. The waffle cookies have a sweet, buttery taste and a soft, chewy texture. They taste delicious and I like the chewy texture, though I�d enjoy them a bit crispier. But these cookies are super yummy.

My wife likes nibbling on these large waffle wafers. My daughter doesn't. I'm worried my son's allergies to chickpeas makes this chickpea flour containing product off limits to him. I think the taste is fine. Not too honey tasting or sweet. But, I'd prefer something a bit crispier; there's a softness to the product. Perhaps that is the European or Canadian preferences shining through. I was happy to see that the batch I'd gotten was only manufactured 3 weeks ago; the fresher, the better I'd say. The ingredient list does not look like it will stand up to years of storage.

After returning from an Amsterdam vacation years ago, we searched for StroopWafels that would compare with what we bought there. We found them in specialty stores and one chain import store. But we were elated to find US made versions that are so close to the original. These are thin waffles with a layer of honey/ caramel in between. I love to have them with my coffee. My kids like them as afternoons snacks. My husband likes them as a light night treat. They are thin and chewy but not too sweet. I also love that they are individually wrapped for easy grab-and-go.

I took these Rip Van Wafels Honey and Oats Snack Waffles to the office and they were a big hit. People came back asking for more! Here is one comment of a Coworker verbatim: "Tasted so good. When I ate it I felt like I was doing something wrong! I am a big fan of anything with honey." In other words, he enjoyed them so much he said that he actually felt guilty. The ingredients of the waffles are all natural and organic. Remarkably, they don't have high fructose corn syrup as a sweetener. This is a huge plus for me as I avoid high fructose corn syrup like the plague. So if you are having a sweet tooth and enjoy honey goodness I recommend this delicious snack for minimizing the damage and having a little "guilty" culinary pleasure.

I was first introduced to these wafels while interning in the Bay Area, and of all the snacks in available to use, these were the ones I wanted back. They make an excellent snack/treat, and unlike most processed foods/cookies, they don't give you a sugar crash, and they actually tide you over.
