Our friend, Ben, brought some of these Skratch Raspberry Cookie Bars on a ride last weekend and we wanted to share his recipe. It's vegan too!

Skratch Cookie Mix:

[product_grid id="193839"] As a plant-based Ironman triathlete, it's often hard to find good tasting plant-based training foods and fuels.  As an avid consumer of Skratch's hydration products, I was not only excited to see them launch their first food product, but a food product that could be made vegan.  This recipe for Skratch's cookie mix is 100% plant-based and tastes amazing.  Finding the motivation for my long rides is no longer a problem as I know these cookies await during and after the ride!

  • 1 package Skratch cookie mix
  • 1/2 cup organic apple sauce
  • 1.5 tbsp coconout oil
  • 1/2 cup vegan chocolate chips
  • 1/2 cup raspberries
Instructions: Pre-heat oven to 350.  Line a 9x9 baking tin or a cookie sheet with parchment paper.  In a mixing bowl, combine cookie mix, apple sauce, coconut oil (melted) and chocolate chips.  Stir with a spatula to combine until the mix is thoroughly combined (add applesauce as needed to the extent it's still dry and too clumpy).  Spread the mix out on the baking tin (or make into cookies) about 1/4 inch thick in order to cook all the way through.  Add the raspberries on top and gently press into the mix.  Cook for 35-40 minutes until golden brown (cooking tim will ultimately depend on the thickness).  Allow to cool for at least 20 minutes before cutting.  Wrap and freeze for your next ride!
