The cookie revolution is here and it is a beautiful thing. Athletes are prioritizing food that tastes great over other options, and they're using it to fuel their workouts. Introduced earlier this year, Skratch Labs Cookie Mix is now one of our best sellers. It's no surprise to us, these cookies taste great and are easy to bake. We've come up with some great recipes in the past, and we want you to see if you can come up with something awesome!

Walnut Manchego Apple Butter Bars

Ingredients:

  • 1 Skratch Labs Cookie Mix
  • 10 ounces Manchego cheese
  • 4 tablespoons Life of Riley Walnut Butter
  • 4 tablespoons apple butter
  • 1 stick of butter
  • 1 egg
  • 2 teaspoons of nutmeg

Procedure: In a 9x9 baking pan mix dry Skratch Labs Cookie Mix with 1 egg and 1 stick of butter at room temperature. Split the cookie dough mixture into two equal parts. Take 1/2 of the cookie dough and spread it evenly with clean hands on the bottom of the baking pan. Make sure the cookie dough full covers the bottom.

Spread Life of Riley Walnut Butter and Apple Butter across the first layer of cookie in your baking pan. Cut manchego cheese into thin slices of the same thickness. Lay manchego cheese flat on top of the walnut and apple butter. Sprinkle nutmeg across the entire baking pan, using roughly 2 teaspoons or however much it takes to spread evenly. Be careful not to add too much nutmeg, it's powerful stuff! Take the other 1/2 of the cookie dough and gently spread it on the top of the dough and ingredients in the baking pan. Be sure to full cover all of the cheese slices prior to baking. Bake in a 350 degree oven for 23-27 minutes or until golden brown on the top. Cut cookie bars into pieces and do whatever you can not to eat them all at once!
